This old fashioned fruit cocktail cake was a favorite of my late husband, Dave. Delicious served with whipped cream!

Granny Leta's Fruit Cocktail Cake

An old-fashioned cake is quick and easy, and has a rich buttery coconut topping!

Ingredients

Cake
  • 2 eggs
  • 1 1/2 C sugar
  • 2 C flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 16 oz can fruit cocktail with juice (don't drain!)
  • 1 tsp vanilla
Icing
  • 1 cup evaporated milk
  • 2/3 C sugar
  • 1 tsp butter
  • 1/2 tsp vanilla
  • 1/2 C flaked coconut
  • 1/4 C pecans or walnuts

Instructions

To prepare the cake
  1. Preheat oven to 350 degrees.
  2. Beat eggs and sugar together for 5 minutes on medium, until fluffy and lemon colored.
  3. Sift together flour, baking soda, and salt. Add to egg/sugar mixture.
  4. Stir in fruit cocktail with juice, and vanilla.
  5. Bake in a greased and floured 9x13 pan for 30 minutes. The cake should spring back in the center and be golden brown. A toothpick test won't work well for this cake.
  6. Make icing, spread on warm cake.
Make icing
  1. Mix milk, sugar and butter. Cook in a medium saucepan, stirring until thick and bubbly.
  2. Remove from heat. Stir in vanilla, coconut and nuts.
  3. Spread on warm cake.
