Granny Leta's Fruit Cocktail Cake

An old-fashioned cake is quick and easy, and has a rich buttery coconut topping!
Ingredients
Cake
- 2 eggs
- 1 1/2 C sugar
- 2 C flour
- 2 tsp baking soda
- 1/4 tsp salt
- 16 oz can fruit cocktail with juice (don't drain!)
- 1 tsp vanilla
Icing
- 1 cup evaporated milk
- 2/3 C sugar
- 1 tsp butter
- 1/2 tsp vanilla
- 1/2 C flaked coconut
- 1/4 C pecans or walnuts
Instructions
To prepare the cake
- Preheat oven to 350 degrees.
- Beat eggs and sugar together for 5 minutes on medium, until fluffy and lemon colored.
- Sift together flour, baking soda, and salt. Add to egg/sugar mixture.
- Stir in fruit cocktail with juice, and vanilla.
- Bake in a greased and floured 9x13 pan for 30 minutes. The cake should spring back in the center and be golden brown. A toothpick test won't work well for this cake.
- Make icing, spread on warm cake.
Make icing
- Mix milk, sugar and butter. Cook in a medium saucepan, stirring until thick and bubbly.
- Remove from heat. Stir in vanilla, coconut and nuts.
- Spread on warm cake.
